Ingredients
  1. 2 Tbsp. Butter
  2. 2 Tbsp.Cornstarch
  3. 2 Tbsp. Mustard
  4. 1/2 cup Milk
  5. 1/2 cup Cream
  6. 2 cups Chicken Stock
  7. 1 1/4 Appenzeller Cheese(shredded)
  8. Salt and Pepper
Instructions
  1. Melt Butter
  2. Add Cornstarch and Mustard, mix well
  3. Add Milk and Cream, stir for 2 minutes until thickened, set aside.
  4. In a separate saucepan heat the chicken stock until it comes to a boil
  5. Add the shredded cheese, melt slowly into stock
  6. Mix the two by adding the the cheese/stock to the mustard/cream mixture
  7. Heat and add Salt and Pepper to taste
Garnish Varieties
  1. thinly sliced prosciutto, ham, or salmon

  1. Dill or Chives
