Gruyere stuffed Ravioli

Ravioli Filling
  1. 1/2 cup of finely diced Salsiz sausage
  2. 1/4 cup of half-fat quark*
  3. 1 cup of grated Gruyère AOC
  4. ½ a tsp of salt
  5. a little pepper
  6. nutmeg
Pasta Dough
  1. 2 cups flour
  2. 3 eggs
  3. 1 Tbsp oil
  4. 1 Tbsp water
  1. Dough
  2. Make a well in the four and crack the eggs in the middle of the well
  3. With a fork mix in the eggs
  4. Add water and oil
  5. The mixture will look very lumpy
  6. Turn onto a floured surface and knead until smooth and a little sticky (8-10 minutes)
  7. Roll out and cut into squares
  8. Filling
  9. Mix all ingredients in a bowl
  10. Building Ravioli
  11. Depending the size of your ravioli, you want to put the filling in the middle of the square
  12. Lightly brush the sides of the square with water
  13. Place another square of dough atop the filling and connect it with the other side of dough.
  14. Take a fork and make impressions or designs on your dough
  1. *Quark rarely found in the US you can substitute sour cream or cream cheese
